Patience, in every cut
Dry aging is where great beef becomes exceptional. In our climate-controlled cabinet, whole cuts rest for weeks, allowing moisture to gently concentrate and natural enzymes to tenderise the meat. The result is deeper, richer, more complex flavour — and the unmistakable aroma of truly considered beef.
Selection
We choose prime cuts with the right fat coverage and muscle structure for extended aging.
Time
Each cut is aged for a minimum of 21 to 45 days, depending on the breed and desired intensity.
Precision
Temperature, humidity and airflow are controlled around the clock to protect flavour and texture.
